Appellation: AOP La Clape
Soil: The Domain is located in the heart of an abundant « garrigue » nearby the Mediterranean shore. The soils are mainly limestone with some sandstone, red clay and shale. Mediterranean climate with strong sea influence.
Grapes: Grenache blanc, Viognier, Roussanne.
Harvest: Manual, in small crates. Cooling of the grapes at 2°C in refrigerated room to avoid any oxydation.
Yield: 35 hl/ha
Vinification: Sorting table, direct pressing at low temperature with gas to avoid any oxydation. Fermentation 100% in French oak barrels (brand new and one wine).maturation on the lees and aged during 12 months.
Alcohol: 14 %
Tasting: Nice, golden, bright color. Fine nose. Its white peach, exotic fruits and fresh vanilla aromas, as well as its round intense balanced palate make it the ideal companion at aperitif to fishes, white meats, or cheeses. To be served at 10°C. Can be kept: 2 – 3 years.
